Dear Friend:
Another month has gone by and we are quickly approaching the warm summer months. Spring has long sprung and it's time to get ready for some real fun. You've probably done some spring cleaning in your home and maybe even went through your old clothes and some some wardrobe spring cleaning. I'm also taking a guess that you started preparing for the summer months by getting (or at least planning to get) a make-over of some sort. Am I right? That's ok if I'm not. It's just that people usually like to sport a new look with their new summer geer.
What I'm more concerned about when it comes to your spring cleaning is if you've done any for the soul. Have you? If you haven't yet that's alright too. It's never too late to sweep out the dusty addict of your mind, replacing any fuzz ball thinking with positive, more empowering thoughts. It's what I like to call a New Attitude for a New Season.
While spring cleaning your home, your wardrobe and your appearance is beneficial, spring cleaning your mind is even more beneficial and it doesn't cost anything other than a willingness to change. Do you realize that your attitude really does determine your altitude? That's a common saying I know but it has so much substance to it. Even the Bible says, "As a man thinketh in his heart, so is he." I encourage you to do some serious soul searching and get rid of those negative thoughts which will do nothing more than hinder you. If there are people in your life that are draining your energy, then put some distance between them. I have had so called friends who did nothing more than sap the energy out of me with their constant complaining. Have you ever asked someone how their weekend was and every time you ask you get a response like, "Oh God it was awful. Everything always goes wrong." "Well maybe if you change your attitude, your circumstances will change." is what I want to say. Of course, that might open a can of worms so I just smile and keep on moving. I really believe that some people just like to be miserable. Please don't be that type of person.

Healthy Fruit Squares Recipe
Ingredients: 12 oz mixed dried fruit of your choice (dates, apricots, raisins etc.) 4 oz nuts (cashews, almonds, walnuts, hazelnuts or Brazil nuts) 4 oz desiccated coconut Grated rind of 1 lemon or orange 1 oz of orange juice Extra desiccated coconut for coating
Instructions: Process dried fruit mixture and nuts in a food processor or blender until finely chopped.
Add coconut and grated rind of orange or lemon and process again; add the orange juice to make a firm paste.
Sprinkle desiccated coconut in an 8 inch square cake tin, Press the fruit mixture deeply into the tin and finish off with some more coconut
Put a weight on top of the cake tin and chill in the fridge. When chilled and firm slice into 1inch squares and enjoy!
